Ingredients:
- 500 g lamb shank or beef stew meat
- 1 onion, finely chopped
- 1 can chickpeas, drained and rinsed
- ½ tsp salt
- ½ tsp Arabic spices (e.g., cumin, coriander)
- 1 liter water
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and sauté until soft and translucent.
3. Add the lamb shank or beef stew meat to the pot and brown on all sides.
4. Pour in the water and add salt and Arabic spices. Stir well.
5. Bring the soup to a boil, then reduce the heat and cover. Simmer for about 1.5 to 2 hours, until the meat is tender.
6. In the last few minutes of cooking, add the chickpeas and heat through.
7. Serve hot, garnished with fresh parsley.
