Ingredients:
- 1 kg lamb roulade
- 100 g black olives
- 2 garlic cloves
- 500 g potatoes
- 100 ml cream
- Salt
- Pepper
- 2 tbsp olive oil
- 100 g pickled onions (e.g., gherkins)
Instructions:
1. Prepare the filling: Finely chop the black olives and garlic cloves. Mix them together and season with salt and pepper.
2. Fill the roulade: Open the lamb roulade and spread the olive filling evenly over it. Roll the roulade tightly and tie it with kitchen twine.
3. Sear the roulade: Heat the olive oil in a skillet. Add the roulade and sear it on all sides until golden brown.
4. Make the mashed potatoes: Peel and boil the potatoes in salted water until soft. Drain and mash the potatoes. Add the cream and season with salt and pepper.
5. Serve: Slice the roulade and serve it with the garlic mashed potatoes and pickled onions.
