This delicious lamb pastry recipe is perfect for your Easter table. It combines ground lamb, feta cheese, and fresh tomatoes into a flavorful filling wrapped in buttery puff pastry.

Serving Size: 10 pastries

Ingredients:

- 250 g ground lamb
- 1 garlic clove, minced
- 0.5 tsp salt
- Puff pastry sheets
- 0.5 tsp dried mint
- 1 dl diced goat feta cheese
- 1 boiled onion, chopped
- 1 dl cooked rice
- 10 cherry tomatoes, halved

Instructions:

1. Prepare the filling for the pastries. Chop the onion and mince the garlic.
2. Brown the ground lamb in a pan and add the chopped onion. Sauté until the onion is soft.
3. Add salt, dried mint, feta cheese, cooked rice, and halved cherry tomatoes to the pan. Mix well and remove from heat.
4. Roll out the puff pastry sheets and cut them into squares.
5. Place filling in the center of each square and fold the edges over to form pastries.
6. Brush the tops of the pastries with beaten egg and sprinkle with poppy seeds.
7. Bake at 200°C (400°F) for about 20-25 minutes, until the pastries are golden brown.
