Serving Size: 4 servings
Ingredients:
- 2 medium sweet potatoes - 1 onion
- 2 garlic cloves
- 1 liter vegetable broth
- 100 ml cream (or coconut milk)
- Salt to taste
- Black pepper to taste
- Oil for sautéing
- Fresh herbs (e.g., thyme or parsley) for garnish
Instructions:
1. Peel and dice the sweet potatoes. 2. Finely chop the onion and garlic.
3. Heat oil in a pot and sauté the onion and garlic until soft.
4. Add the diced sweet potatoes to the pot and stir.
5. Pour in the vegetable broth and cook until the sweet potatoes are tender (about 15-20 minutes).
6. Blend the soup with an immersion blender or in a regular blender until smooth.
7. Stir in the cream (or coconut milk) and season with salt and black pepper.
8. Heat gently for a moment, but do not boil.
9. Serve the soup garnished with fresh herbs.
