Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 200 g fresh mushrooms (e.g., button or chanterelles)
- 1 onion
- 2 garlic cloves
- 200 ml heavy cream
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little pasta water.
2. Peel and finely chop the onion and garlic. Slice the mushrooms.
3. Heat olive oil in a skillet over medium heat. Add the onions and garlic, sautéing until soft.
4. Add the mushrooms to the skillet and cook until golden brown and the moisture has evaporated.
5. Pour the heavy cream into the skillet and let it simmer on low heat for a few minutes.
6. Mix the cooked pasta into the sauce. If needed, add a bit of reserved pasta water to achieve the desired consistency.
7. Season with salt and black pepper. Stir in the grated Parmesan cheese until well combined.
8. Serve the pasta garnished with fresh parsley.
