Ingredients
- 2 red onions - 300 g potatoes
- 600 g cauliflower
- 300 g carrots
- 5 cl olive oil
- 3 cl lemon vinegar
- Black pepper, salt

Instructions
1. Slice the red onions, potatoes, and carrots into evenly thick slices. 2. Break the cauliflower into small florets.
3. Prepare the marinade by mixing olive oil, lemon vinegar, and spices (recommend mild herbs like thyme or oregano).
4. Combine all vegetables with the marinade and let them marinate for about 15 minutes.
5. Preheat the oven to 200°C (392°F).
6. Spread the marinated vegetables in a baking dish and bake for about 25-30 minutes or until the potatoes are tender and beautifully golden brown.
