Description: A delightful and healthy salad made with quinoa and sautéed mushrooms, perfect as a side dish or a light meal.

Serving Size: 4 servings
Ingredients:
- 1 cup quinoa
- 2 ½ cups water
- 7 oz (200 g) mushrooms
- 1 tbsp olive oil
- 1 small onion
- 2 garlic cloves
- 1 cup fresh parsley
- Salt to taste
- Pepper to taste
- Lemon juice (optional)
Instructions:
1. Rinse the quinoa thoroughly under cold water.
2. Cook the quinoa in water for about 15 minutes, until the water is absorbed and the quinoa is tender.
3. Chop the onion and garlic, and slice the mushrooms.
4. Heat olive oil in a skillet and add the onions and garlic. Sauté until soft.
5. Add the mushrooms to the skillet and cook until they are golden brown and tender.
6. Mix the cooked quinoa with the mushroom mixture.
7. Stir in the chopped parsley, salt, pepper, and lemon juice if desired.
8. Serve the salad warm.
