Ingredients:
- 1 cup bulgur
- 4 cups water
- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 1 zucchini
- 1 carrot
- 1 teaspoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- Fresh herbs (such as parsley or basil)
Instructions:
1. Rinse bulgur under cold water and place it in a pot.
2. Add 4 cups of water and salt to the pot. Bring to a boil. Once boiling, reduce the heat and cover the pot, allowing the bulgur to cook for about 12-15 minutes until the water is absorbed.
3. Peel and chop the onion and garlic. Heat olive oil in a frying pan and sauté the onion and garlic over medium heat until soft.
4. Chop the bell pepper, zucchini, and carrot. Add them to the pan and sauté for a few minutes until the vegetables are tender but still crisp.
5. Season the vegetables with black pepper and paprika.
6. Once the bulgur is cooked, mix it with the vegetables. Add chopped fresh herbs and stir well.
7. Serve warm.
