Ingredients:

- 1 cup bulgur
- 2 cups water
- ⅓ cup dates, chopped
- 1 red onion, thinly sliced
- 1 avocado, diced (optional)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or mint) for garnish

Instructions:

1. Rinse the bulgur under cold water and drain it.
2. In a pot, bring the water to a boil and add the bulgur. Reduce the heat, cover the pot, and let it simmer for about 12–15 minutes until the bulgur is tender and the liquid is absorbed.
3. Meanwhile, prepare the other ingredients. In a bowl, combine the chopped dates, sliced red onion, and diced avocado.
4. Once the bulgur is cooked, allow it to cool slightly, then add it to the bowl with the other ingredients.
5. Drizzle with olive oil, lemon juice, and season with salt and pepper. Mix well.
6. Garnish with fresh herbs before serving.
