A delicious and nutritious salad combining couscous, bulgur, and quinoa, bringing flavors from North Africa and the Middle East. This salad is a perfect side dish or light main course that's easy to prepare.

Ingredients:

- 1 cup couscous
- 1 cup bulgur
- 1 cup quinoa
- 2 cups water
- 1 tsp salt
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste

Instructions:

1. In a pot, bring water to a boil and add salt. Stir in couscous, bulgur, and quinoa. Mix well and cover the pot. Let it simmer for 10 minutes.
2. Once the grains are cooked, transfer them to a bowl and let them cool.
3. Prepare the vegetables: dice the cucumber and bell pepper, and halve the cherry tomatoes. Finely chop the red onion and chop the parsley and mint.
4. Add the vegetables and herbs to the cooled grain mixture.
5. In a bowl, combine olive oil and lemon juice. Pour the dressing over the salad and mix well. Season with salt and pepper.
6. Serve the salad immediately or let the flavors meld in the refrigerator for about 30 minutes before serving.
