A refreshing and nutritious salad combining bulgur, perch fillets, and fresh vegetables for a hearty and healthy meal.

Ingredients:

- 200 g bulgur
- 400 ml water
- 300 g perch fillets
- 2 tbsp sesame seeds
- 1 red bell pepper
- 1 cucumber
- 1/2 red onion
- 1 dl fresh parsley
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste

Instructions:

1. Rinse bulgur and add it to a pot with water. Bring to a boil, reduce heat, and cover, allowing it to cook for about 15 minutes until the water is absorbed.
2. In a skillet, cook perch fillets in olive oil over medium heat for about 3-4 minutes on each side until golden brown and cooked through. Season with salt and pepper.
3. Toast sesame seeds in a dry pan until they turn golden.
4. Dice the bell pepper and cucumber, and finely chop the red onion and parsley.
5. In a large bowl, combine cooked bulgur, sautéed perch fillets, vegetables, and parsley. Add lemon juice and toasted sesame seeds.
6. Gently mix all ingredients together and season with salt and pepper to taste.
