Ingredients:
- 2 cups bulgur wheat
- 1 avocado
- 1 small red onion
- 50 g pistachios
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions:
1. Cook the bulgur according to the package instructions, then drain well.
2. Transfer the bulgur to a bowl and add the olive oil and lemon juice. Season with salt and pepper.
3. Peel and dice the avocado. Chop the onion finely or slice it. Roughly chop the pistachios.
4. Combine all ingredients in the bowl and mix well. Serve immediately.
