A delicious and hearty bake that combines beans, bulgur, and mozzarella. It's easy to prepare and perfect for a weekday dinner or a weekend feast.

Ingredients:
- 1 can of beans (e.g. kidney beans or black beans)
- 2 dl bulgur
- 4 dl vegetable broth
- 1 onion
- 2 garlic cloves
- 1 tsp paprika powder
- 1 tsp oregano
- Salt and pepper to taste
- 200 g mozzarella cheese
- 2 tbsp olive oil
- Fresh parsley (for garnish)
Instructions:
1. Sauté the chopped onion and minced garlic in olive oil in a skillet until soft.
2. Add the bulgur and sauté for a few minutes.
3. Pour the vegetable broth over the bulgur mixture and bring to a boil. Once the liquid is absorbed, remove from heat.
4. Rinse and drain the canned beans, then add them to the bulgur mixture. Season with paprika, oregano, salt, and pepper. Mix well.
5. Transfer the mixture to a baking dish and sprinkle diced mozzarella on top.
6. Bake in a preheated oven at 200°C (392°F) for about 15-20 minutes, until the cheese is melted and golden.
7. Garnish with fresh parsley before serving.
