A delicious and hearty soup perfect as a starter or a light main course.

Serving Size: 4 servings
Ingredients:
- 400 g mushrooms
- 1 onion
- 2 garlic cloves
- 1 tbsp butter
- 1 tbsp olive oil
- 1 liter vegetable broth
- 200 ml cream
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter and olive oil in a pot over medium heat. Add the onions and garlic, and sauté for about 5 minutes until soft.
4. Add the sliced mushrooms to the pot and cook until the moisture evaporates and the mushrooms are tender, about 5-7 minutes.
5. Pour the vegetable broth into the pot and bring to a boil. Let the soup simmer on low heat for about 10 minutes.
6. Stir in the cream and warm the soup for a bit longer. Season with salt and black pepper.
7. Serve the soup hot, garnished with fresh parsley.
