A delicious and nutritious cold smoked salmon soup that combines flavorful vegetables and smoked salmon, creating the perfect dish to enjoy. Preparation time is about 30 minutes and serves 4.Ingredients:
- 200 g shiitake mushrooms
- 1 l vegetable broth
- 0.5 tsp black pepper
- 1 parsnip
- 200 g cold smoked salmon
- 1 onion
- 0.5 tsp salt
- 1 dl white wine
- 1 carrot
Instructions:
1. Slice all the vegetables: parsnip, onion, carrot, and shiitake mushrooms.
2. Heat a couple of tablespoons of oil in a pot.
3. Add the sliced vegetables and sauté them lightly for about 5 minutes.
4. Pour in the white wine and vegetable broth, and cook the vegetables until tender, about 15-20 minutes.
5. Add the sliced cold smoked salmon to the soup and adjust the seasoning. Add salt and black pepper if needed.
6. Do not boil anymore; serve hot.
