A delicious cold smoked salmon soup that combines creamy flavors with delightful fish, perfect as a starter or a light main dish. Preparation time is about 30 minutes, serving size is 4-6.Ingredients:
- 400 g brown cheese (flötemysost), grated
- 1.5 liters water
- 1 package (around 200 g) Koskenlaskija cheese
- 200 ml heavy cream
- 1 kg potato and root vegetable strips
- 1.5 tbsp salt
- Black pepper to taste
- Lemon pepper to taste
- 400 g cold smoked salmon, cut into pieces
Instructions:
1. Melt the Koskenlaskija cheese in boiling water.
2. Add salt, black pepper, and lemon pepper.
3. Stir in the potato and root vegetable strips and cook for 15 minutes.
4. Add the pieces of cold smoked salmon and cream, bringing the soup to a boil.
5. Serve the soup in bowls and top with grated brown cheese.
