Ingredients:
- 1/2 watermelon
- 1/2 cantaloupe melon
- 2 cups vegetable broth
- 1 small chili (to taste)
- Salt and pepper
- Fresh mint for garnish
- Fennel seeds (toasted)
Instructions:
1. Cut the melons in half and remove the seeds.
2. Chop the fruit flesh and place it in a food processor.
3. Add the vegetable broth, chili, and seasonings.
4. Blend the mixture until smooth.
5. Taste and adjust seasoning if needed.
6. Transfer the soup to the refrigerator to chill.
7. Portion the chilled melon soup into serving bowls.
8. Sprinkle fresh mint and toasted fennel seeds on top before serving.
