A light and flavorful vegetable soup that comes together quickly and is perfect for everyday meals.

Ingredients:
- 1 cup quinoa
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté for about 3-4 minutes until softened.
2. Add the diced carrots, bell pepper, and zucchini. Cook the vegetables for an additional 5 minutes.
3. Rinse the quinoa thoroughly under cold water and add it to the pot with the vegetables.
4. Pour the vegetable broth into the pot and add thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat and let the soup simmer for about 15-20 minutes, until the quinoa is cooked and the vegetables are tender.
5. Taste and adjust seasoning if necessary. Serve the soup garnished with fresh parsley.
