This refreshing salad is the perfect light meal in the midst of winter. It brings the energy and color of the sun to your table. Preparation Time: 20 minutes
Ingredients:
- 200 g fresh baby spinach
- 1 ripe avocado
- 150 g cherry tomatoes
- 100 g feta cheese
- 1 dl roasted nuts (e.g. walnuts or almonds)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the baby spinach and dry it well.
2. Slice the avocado and halve the cherry tomatoes.
3. Crumble the feta cheese directly over the salad.
4. Add the roasted nuts to the salad.
5. Prepare the dressing by mixing together olive oil, balsamic vinegar, salt, and pepper.
6. Drizzle the dressing over the salad and gently toss to combine.
7. Serve immediately and enjoy the sunshine!
