Ingredients:

- 200 g mixed greens (e.g., arugula and iceberg lettuce)
- 1 avocado
- 1 cucumber
- 200 g cherry tomatoes
- 1 red onion
- 100 g feta cheese
- 50 g sunflower seeds
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste

Instructions:

1. Rinse and dry the mixed greens. Place them in a large salad bowl.
2. Peel and slice the avocado and cucumber. Add them to the greens.
3. Halve the cherry tomatoes and add them to the salad.
4. Slice the red onion into thin rings and add to the bowl.
5. Crumble the feta cheese over the salad.
6. Toast the sunflower seeds in a hot pan for a few minutes until they turn golden. Add them to the salad.
7. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper. Pour it over the salad and toss well.
8. Serve immediately and enjoy the sunshine and the arrival of spring!
