Enjoy delicious pumpkin waffles, perfect for a weekend brunch! These waffles combine the flavors of fall with a kick from TABASCO® Chipotle Sauce.

Ingredients:

- 6 dl yellow winter squash puree (about 400 g peeled squash cubes and 4 dl water)
- 2 eggs
- 3 dl all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 50 g butter
- Soft goat cheese
- Cherry tomatoes
- Salad/herbs
- Fried "sunny-side up" egg per serving
- TABASCO® Chipotle Sauce
- Freshly ground black pepper

Instructions:

1. Halve the squash, cut into smaller pieces, and remove the seeds. Peel and cube the flesh.
2. Boil the squash cubes in a covered pot until tender. Blend with an immersion blender and let cool.
3. Melt the butter. In a bowl, beat the eggs and add the cooled squash puree.
4. In a separate bowl, mix the flour and baking powder. Gradually whisk the dry mixture into the squash mixture. Add salt and melted butter. Let the batter rest for about 15 minutes.
5. Preheat the waffle iron and brush it lightly with canola oil or butter. Pour a ladle of batter onto the iron and cook until golden brown. Add more fat if needed during cooking.
6. Serve the waffles with goat cheese, cherry tomatoes, salad, and a fried egg. Allow guests to finish their plates with TABASCO® Chipotle Sauce.
