A delicious pumpkin pasta that's the perfect autumn delight. It's easy to make and brings warmth to chilly days.

Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 400 g pumpkin (cubed)
- 2 tbsp olive oil
- 2 garlic cloves (chopped)
- 100 ml vegetable broth
- 100 ml cream (or plant-based cream)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and set aside.
2. Heat olive oil in a skillet over medium heat. Add the pumpkin cubes and sauté for about 5 minutes until they soften.
3. Add the chopped garlic to the skillet and cook for another minute.
4. Pour in the vegetable broth and cream. Mix well and let it simmer on low heat for about 10 minutes until the pumpkin is completely soft.
5. Blend the pumpkin mixture with an immersion blender until smooth. Season with salt and pepper.
6. Combine the cooked pasta with the sauce and heat through for a moment.
7. Serve the dishes garnished with fresh basil or parsley and grated Parmesan cheese if desired.
