A delicious stew that combines the sweet flavors of persimmon and soft pumpkin. A perfect side dish for autumn meals.

Ingredients:

- 400 g pumpkin, diced
- 2 ripe persimmons, diced
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 500 ml vegetable broth
- Fresh thyme for garnish

Instructions:

1. Heat olive oil in a large saucepan over medium heat. Add chopped onion and crushed garlic, sautéing until soft.
2. Add diced pumpkin to the saucepan and cook for about 5 minutes until it starts to soften.
3. Stir in the diced persimmons, salt, black pepper, cinnamon, and nutmeg. Mix well.
4. Pour the vegetable broth over the mixture and simmer on low heat for about 15-20 minutes until the pumpkin is fully tender.
5. If desired, blend the stew using an immersion blender or another blending method.
6. Serve warm, garnished with fresh thyme.
