Ingredients:

- 800 g young potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 dl fresh parsley, chopped
- 100 g feta cheese, crumbled
- 1 dl sour cream
- 1 tbsp lemon juice

Instructions:

1. Wash the young potatoes thoroughly and boil them in salted water for about 15-20 minutes until they are tender but not falling apart.
2. Drain the potatoes and let them cool slightly.
3. Cut the cooled potatoes in half or into quarters, depending on their size.
4. Heat the olive oil in a frying pan over medium heat. Add the potatoes to the pan and fry for about 5-7 minutes until they are beautifully golden brown.
5. Season the potatoes with salt and black pepper.
6. Remove from the pan and mix in the chopped parsley and crumbled feta cheese.
7. Serve with sour cream and lemon juice.
