This delicious vegetable pasta is quick and easy to prepare, perfect for weeknight dinners. The recipe is full of flavor and color, suitable for vegetarians and everyone else. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve about 100 ml of the pasta cooking water.
2. Heat olive oil in a large pan over medium heat. Add onion and garlic, and sauté for about 2-3 minutes until soft.
3. Add the bell pepper and zucchini to the pan. Cook for about 5 minutes until the vegetables are tender.
4. Add the cherry tomatoes and spinach to the pan. Cook for a few more minutes until the spinach has wilted.
5. Stir in the cooked pasta with the vegetable mixture. If needed, add a bit of the reserved pasta cooking water to make the mixture more saucy.
6. Season with dried basil, salt, and pepper. Mix well.
7. Serve warm, optionally sprinkle with grated Parmesan cheese.
