Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 200 g fresh mushrooms, sliced
- 400 g canned crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 100 g fresh basil, chopped
- 50 g grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and set aside.
2. Heat the olive oil in a skillet over medium heat. Add the onion and garlic, cooking until softened.
3. Add the bell pepper and mushrooms to the skillet, cooking for a few minutes until tender.
4. Pour in the crushed tomatoes and add oregano, salt, and black pepper. Simmer over low heat for about 10 minutes.
5. Stir in the cooked pasta and heat through for a moment.
6. Add the chopped basil and mix well.
7. Serve in bowls and sprinkle with grated Parmesan cheese if desired.
