A delicious pasta bake perfect for busy weekdays or weekend treats. Combining pasta, vegetables, and cheese creates a rich and flavorful meal. Preparation Time: 45 minutes
Serving Size: 4-6 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli) - 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g mushrooms, sliced
- 1 zucchini, diced
- 400 g crushed tomatoes
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 200 g grated cheese (e.g., mozzarella or cheddar)
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions and drain. 2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until soft.
3. Add bell pepper, mushrooms, and zucchini. Cook for about 5-7 minutes until the vegetables are tender.
4. Stir in the crushed tomatoes, oregano, salt, and black pepper. Let it simmer on low heat for about 10 minutes.
5. Mix the cooked pasta into the vegetable mixture and combine well.
6. Pour the pasta-vegetable mixture into a baking dish and sprinkle the grated cheese on top.
7. Bake at 180°C (350°F) for about 20-25 minutes until the cheese is golden brown.
8. Allow to cool for a few minutes before serving. Garnish with fresh basil.
