Ingredients:
- 1 cauliflower
- 1 onion
- 2 potatoes
- 1 liter vegetable broth
- 200 g smoked cheese
- 2 tablespoons butter
- salt to taste
- pepper to taste
- fresh herbs (e.g., parsley) for garnish
Instructions:
1. Clean and chop the cauliflower, onion, and potatoes.
2. Melt the butter in a pot and sauté the onion for a few minutes until softened.
3. Add the chopped potatoes and cauliflower to the pot, and cook for a few more minutes.
4. Pour the vegetable broth into the pot and cook until the vegetables are tender, about 15-20 minutes.
5. Stir in the smoked cheese and mix until melted into the soup.
6. Use an immersion blender to puree the soup until smooth.
7. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh herbs.
