Serving Size: 4-6 people
Ingredients:
- 250 g pasta (e.g., fusilli or penne)
- 200 g cherry tomatoes, halved
- 1 cucumber, diced
- 150 g feta cheese, crumbled
- 100 g olives (e.g., black or green), sliced
- 1 red onion, thinly sliced
- 100 ml olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and let cool.
2. In a bowl, combine the cooled pasta, cherry tomatoes, cucumber, feta cheese, olives, and red onion.
3. In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
4. Pour the dressing over the salad and toss well to combine.
5. Allow the salad to marinate in the refrigerator for about 10-15 minutes before serving.
