A delicious and nutritious vegetable pasta, perfect for busy weeknights.
Preparation time: 30 minutes
Serving size: 4 servings
Ingredients:
- 300 g pasta (e.g. spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g Parmesan cheese (optional)
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until soft.
3. Add bell pepper and zucchini, continue sautéing for about 5 minutes.
4. Stir in cherry tomatoes and spinach, cook for a few more minutes until spinach wilts.
5. Toss the cooked pasta with the vegetables. Add reserved cooking water if needed to keep it from being too dry. Season with salt and pepper.
6. Serve in bowls, topping with Parmesan cheese and fresh basil.
