A delicious and flavorful soup that perfectly combines chanterelle mushrooms and nettles. A great choice to enjoy the spring's delights. Preparation Time: 30 minutes

Ingredients:
- 200 g chanterelle mushrooms (fresh or frozen) - 100 g fresh nettles
- 1 large onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and black pepper to taste
- Fresh herbs (e.g., parsley) for garnish
Instructions:
1. Peel and finely chop the onion and garlic. 2. Melt the butter in a pot and sauté the onion and garlic over low heat until soft.
3. Add the chanterelle mushrooms to the pot and cook for a few minutes until they are tender.
4. Pour in the vegetable broth and let the soup simmer for about 10 minutes.
5. Add the nettles to the soup and cook for another 5 minutes until they are softened.
6. Blend the soup until smooth using a blender or immersion blender.
7. Pour the soup back into the pot and add the cream. Heat the soup again, but do not let it boil.
8. Season with salt and black pepper to taste.
9. Serve the soup garnished with fresh herbs.
