A delicious gluten-free pie that combines oats and almonds, filled with tasty nettles, lemon, and garlic. Best served fresh!Preparation Time: 1 hour

Ingredients
Crust:- 2 dl almond flour
- 2 dl oat flour (gluten-free for celiac)
- 3/4 tsp sea salt
- 2 tsp psyllium husk
- 3/4 dl olive oil
- 1/2 dl water
Filling:
- 1 large onion (or a few small ones)
- 2 cloves of garlic
- 130 g young nettles (approximately a large bowl full)
- 2 1/2 dl oat cream
- 1 1/2 tbsp lemon juice
- 1/2-2/3 tsp sea salt
- 2 tbsp nutritional yeast flakes
- 1/4 tsp black pepper
- 1 tbsp potato flour
- Oil for frying
Instructions
1. Prepare the crust: In a bowl, mix almond flour, oat flour, salt, and psyllium husk. Add oil and water, mixing to form a smooth dough. Let the dough rest in the refrigerator while preparing the filling.2. Prepare the filling: Chop the onion and sauté it in oil until soft. Chop the nettles with a large knife.
3. Remove the pan from heat and mix in the minced garlic, chopped nettles, oat cream, lemon juice, salt, nutritional yeast, black pepper, and potato flour. Stir well.
4. Take the dough from the refrigerator and roll it out on parchment paper. Transfer the dough to a greased and floured pie dish, pressing the edges down.
5. Pre-bake the crust at 175°C (350°F) for about 10 minutes.
6. Spread the filling over the pre-baked crust and bake for an additional 30 minutes or until the pie is beautifully golden brown.
7. Allow the pie to cool for a moment before serving.
