Nokkospiirakka (Nettle Pie)

A savory Finnish pie filled with nettles and cheese, perfect as a light meal or appetizer. Preparation Time: 1 hour
Serving Size: 6-8 servings
Ingredients:
- Crust:
- 100 g butter
- 3 dl all-purpose flour
- 1 tsp sea salt
- 1 egg
- Filling:
- 1 liter (200 g) nettle leaves
- 1 dl grated Emmental cheese
- 2 dl cream
- 2 eggs
- 70 g grated Parmesan cheese
- A pinch of freshly ground black pepper
- Cherry tomatoes and parsley (for garnish)
Instructions:
1. Rinse the nettle leaves and blanch them quickly in boiling water. Drain and squeeze out excess water, then finely chop the leaves.
2. In a bowl, mix the softened butter and flour. Add the salt and egg, and combine until a smooth dough forms.
3. Grease a 23 cm pie dish and press the dough into the dish and up the sides. Prick the bottom with a fork and let it rest in the refrigerator for a while.
4. Spread the chopped nettles over the dough base and sprinkle the grated Emmental cheese on top.
5. In another bowl, whisk together the eggs, cream, grated Parmesan, and black pepper. Pour the mixture over the filling.
6. Bake the pie in a preheated oven at 200°C (reduce to 180°C) for about 30 minutes or until the filling is set in the center.
7. Allow the pie to cool slightly before serving. Top with halved cherry tomatoes and chopped parsley.
8. Serve with a salad made of soft frisée, cucumber cubes, pointed pepper strips, mango cubes, and dandelion leaves. For the dressing, mix olive oil and lemon juice, seasoning with sugar, salt, and black pepper.
