Nettle Pie with Feta Cheese

A delicious pie utilizing fresh nettles from your garden, easy to prepare and a great alternative to spinach.
Preparation Time: 1 hour
Serving Size: 6-8 servings

Ingredients

Crust
- 125 g butter
- 2 1/4 dl all-purpose flour
- 2-3 tbsp water
- pinch of salt
Filling
- approx. 2 dl / 150 g blanched nettles (or frozen spinach)
- ½ leek, finely chopped
- 2 tbsp canola oil
- 200 g feta cheese, cubed
- 1 dl cream
- 1 dl sour cream
- 2 eggs
- ½ tbsp dried basil
- 2 dl grated pecorino (or parmesan)
- salt
- black pepper
- toasted pine nuts

Instructions

1. Mix the crust ingredients by hand or with a fork until they form a dough. Press the dough into the bottom and up the sides of a 28 cm diameter pie dish.
2. Sauté the chopped leek in canola oil in a frying pan, then add the nettles and stir. Remove from heat and let cool slightly.
3. Lightly beat the eggs in a bowl. Stir in the cream, sour cream, grated cheese, basil, and seasonings.
4. Add the feta cheese cubes and leek-nettle mixture to the egg mixture. Pour the filling over the prepared crust in the pie dish.
5. Bake in a preheated oven at 200 °C for about 40 minutes.
6. Sprinkle toasted pine nuts on top of the finished pie before serving.
