A delicious Finnish nettle pie that combines fresh nettle leaves with creamy cheese filling. Perfect for a savory snack or light meal.

Serving Size: 6-8 servings
Ingredients:
- 200 g fresh nettle leaves (or spinach)
- 1 can (200 g) cream cheese
- 2 eggs
- 1 dl cream
- 1 dl grated cheese (e.g., Emmental or mozzarella)
- 1 tbsp oil or butter for frying
- Salt and pepper to taste
- Pre-made pie crust (e.g., thawed puff pastry)
Instructions:
1. Preheat the oven to 180°C (350°F).
2. Rinse the nettle leaves thoroughly and remove the stems. Blanch the leaves in boiling water for about 2-3 minutes, then drain and squeeze out excess moisture.
3. Sauté the nettles in oil in a pan for a few minutes until softened. Allow to cool slightly.
4. In a bowl, mix together the cream cheese, eggs, cream, grated cheese, salt, and pepper.
5. Add the cooled nettles to the filling mixture and stir well.
6. Place the pie crust in a baking dish and pour the filling over it.
7. Bake in the oven for about 30-35 minutes or until the top is beautifully golden brown.
8. Let the pie cool for a while before serving. Enjoy warm or at room temperature.
