Ingredients:
- 300 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Meanwhile, fry the bacon in a pan over medium heat until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese, adding salt and black pepper to taste.
4. Once the pasta is ready, drain it, reserving some cooking water. Add the pasta to the bacon mixture in the pan and stir well.
5. Remove the pan from heat and quickly add the egg mixture to the pasta, stirring to cook the eggs gently with the residual heat. Add reserved cooking water as needed to create a creamy sauce.
6. Serve immediately, garnished with fresh parsley and extra Parmesan cheese on top.
