Delicate and beautiful French pastries, perfect for coffee tables or celebrations.Preparation Time: 1 hour + drying time 1-2 hours
Serving Size: About 20-24 pastries
Ingredients:
- 100 g almond flour- 100 g powdered sugar
- 2 egg whites
- 50 g granulated sugar
- 1 tsp vanilla extract (optional)
- Food coloring (optional)
Filling:
- 100 g butter (softened)- 200 g powdered sugar
- 50 g cocoa powder or other flavorings (such as fruit puree or chocolate)
Instructions:
1. Prepare the oven: Preheat the oven to 150°C (300°F) and line a baking sheet with parchment paper.2. Mix almond flour and powdered sugar in a bowl. Sift the mixture to make it fine.
3. Prepare the meringue: Whip the egg whites in a bowl until they start to foam. Gradually add granulated sugar and continue whipping until the mixture is glossy and stiff. Optionally, add vanilla extract and food coloring.
4. Gently fold the almond flour and powdered sugar mixture into the meringue until it is smooth and uniform.
5. Pipe the batter onto the parchment paper in round shapes, leaving space between them. Let the pastries dry at room temperature for about 1-2 hours until a skin forms on the surface.
6. Bake the pastries in the oven for about 12-15 minutes. Allow them to cool completely before filling.
7. Prepare the filling: Whip the softened butter until light and fluffy, then add powdered sugar and cocoa (or other flavorings) and mix well.
8. Fill the cooled pastries with your chosen filling and sandwich two pastries together.
