Ingredients:

- 1 cup all-purpose flour
- 1 cup coconut flour
- 1/2 teaspoon salt
- 1/2 cup olive oil
- 1 cup water

Instructions:

1. In a bowl, combine the all-purpose flour, coconut flour, and salt.
2. Add the olive oil and water to the dry ingredients, mixing well until a smooth dough forms.
3. Allow the dough to rest for about 10 minutes.
4. Divide the dough into 8 equal portions and roll each into a ball.
5. On a floured surface, roll each ball into a thin circle.
6. Heat a skillet over medium heat and cook each tortilla for about 1-2 minutes on each side, until golden brown.
7. Keep the cooked tortillas warm by wrapping them in a kitchen towel.
