A delicious and comforting dish combining creamy, spiced coconut sauce with juicy meatballs. Perfect for a weeknight dinner or special occasions.

Serving Size: 4 servings

Ingredients:

- 400 g ground beef
- 1 dl breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tbsp fresh cilantro, chopped
- Salt and pepper to taste
- 1 tbsp oil for frying
Coconut Curry Sauce:
- 400 ml coconut cream
- 2 dl vegetable broth
- 2 tbsp red curry paste
- 1 stalk lemongrass, finely chopped

Instructions:

1. In a bowl, mix together the ground beef, breadcrumbs, egg, minced garlic, chopped cilantro, salt, and pepper. Shape the mixture into small meatballs.
2. Heat the oil in a frying pan over medium heat. Cook the meatballs for about 5-7 minutes, or until they are golden brown.
3. Prepare the coconut curry sauce: In a pot, bring the vegetable broth, coconut cream, red curry paste, and chopped lemongrass to a boil.
4. Add the cooked meatballs to the sauce and let them simmer on low heat for about 10 minutes.
5. Serve warm with rice or naan bread.
