A delicious and nutritious lentil curry that's perfect for a quick and affordable weeknight meal. Preparation Time: 30 minutes

Ingredients:
- 1 onion
- 2 garlic cloves
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 can (400 g) crushed tomatoes
- 1 can (400 g) coconut milk
- 250 g red lentils
- 4 dl water
- 1 bell pepper
- 2 carrots
- Fresh coriander (optional)
- Salt and pepper to taste
Instructions:
1. Peel and finely chop the onion and garlic. Heat a pot over medium heat and add a splash of oil.
2. Add the onion and garlic to the pot, sauté for about 5 minutes until softened.
3. Stir in the curry powder and turmeric, cooking for another minute.
4. Add the crushed tomatoes, coconut milk, red lentils, and water. Mix well.
5. Peel and chop the bell pepper and carrots, adding them to the pot.
6. Allow the curry to simmer on low heat for about 20 minutes or until the lentils are soft.
7. Season with salt and pepper. Serve with fresh coriander if desired.
