These delightful spiced gingerbread cookies are filled with a creamy vanilla frosting and topped with chocolate for an extra treat. Perfect for the holiday season or any festive occasion!
Ingredients:
- 250 g gingerbread dough
- 100 g powdered sugar
- 50 g softened butter
- 1 tsp vanilla sugar
- 2 tbsp milk
- 100 g chocolate (optional, for decoration)
- Spices (cinnamon, ginger, cloves) to taste
Instructions:
1. Allow the gingerbread dough to come to room temperature to soften.
2. In a bowl, beat the softened butter and powdered sugar until fluffy.
3. Add vanilla sugar and milk, mixing well to combine.
4. Take a portion of the gingerbread dough and roll it out to about 5 mm thick.
5. Cut out shapes from the dough to form cookies.
6. Bake the cookies at 175°C (350°F) for about 8-10 minutes, or until golden brown. Let them cool.
7. Once cooled, spread the buttercream filling on one cookie and sandwich it with another.
8. Melt the chocolate and drizzle it over the filled cookies for decoration, if desired.
9. Allow the cookies to rest for a while so the filling and chocolate can set.
