1. Take the Kobe beef filets out of the refrigerator and allow them to reach room temperature for about 30 minutes before cooking.
2. Season the filets with salt and black pepper on both sides.
3. Heat the butter in a skillet over medium heat.
4. Add the filets to the skillet and sear for about 3-4 minutes on each side, or until they reach your desired level of doneness.
5. Remove the filets from the skillet and cover them with foil to keep warm.
6. Pour the sparkling wine into the skillet and let it simmer for a few minutes until slightly reduced.
7. Add the cream and thyme, mix well, and let the sauce simmer for another few minutes.
