A delicious rosemary-infused crème brûlée inspired by Restaurant Rivoli. This sweet and aromatic dessert captivates the taste buds and adds a touch of elegance to any dinner table. Preparation Time: 1 hour + chilling time
Serving Size: 4 servings
Ingredients:
- 200 ml heavy cream
- 200 ml milk
- 50 g sugar
- 4 egg yolks
- 2 sprigs fresh rosemary
- ½ tsp vanilla extract
- 4 tbsp sugar (for caramelizing)
Instructions:
1. Preheat the oven to 150°C (300°F).
2. In a saucepan, combine the cream, milk, sugar, and rosemary. Heat the mixture over medium heat until it begins to steam. Remove from heat and let it cool for about 15 minutes to allow the rosemary flavor to infuse.
3. Strain the mixture into a bowl and discard the rosemary. In a separate bowl, whisk together the egg yolks and vanilla extract lightly.
4. Gradually pour the cream mixture into the egg yolks while continuously stirring to prevent the yolks from cooking.
5. Pour the mixture evenly into four oven-safe ramekins.
6. Place the ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins.
7. Bake in the oven for about 30-35 minutes until the mixture is set but still slightly wobbly in the center.
8. Allow to cool at room temperature, then refrigerate for at least four hours.
9. Before serving, sprinkle sugar on top of each crème brûlée and caramelize it with a torch or under the broiler in the oven.
