Ingredients:
- 300 g pasta (e.g., spaghetti or tagliatelle) - 250 g fresh asparagus
- 2 tablespoons olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
- Juice of 2 lemons
- 3 egg yolks
- 100 g butter
- Fresh parsley for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Add the asparagus to the pasta water for the last 3-4 minutes of cooking. 2. Prepare the Hollandaise sauce: In a saucepan, whisk together the egg yolks and lemon juice gently. Gradually add melted butter in a thin stream while whisking continuously until the sauce thickens and becomes creamy. Season with salt and pepper.
3. Drain the pasta and asparagus, then return them to the pot. Add the olive oil and minced garlic, and mix well.
4. Serve the pasta on plates, drizzle with Hollandaise sauce, and garnish with fresh parsley.
