A rich and creamy sauce perfect for drizzling over eggs Benedict or steamed vegetables. Preparation Time: 10 minutes
Serving Size: 4 servings
Ingredients:
- 3 egg yolks
- 150 g butter
- Juice of 1 lemon (halved)
- Salt to taste
- White pepper to taste
Instructions:
1. Melt the butter over low heat and let it cool slightly.
2. Separate the egg yolks into a bowl and whisk them with a hand whisk.
3. Add the lemon juice and continue whisking until the mixture becomes frothy.
4. Gradually pour in the melted butter in a thin stream while continuously whisking the yolk mixture.
5. Season with salt and white pepper to taste.
6. Serve immediately or keep the sauce warm in a double boiler.
