A rich and creamy sauce perfect for drizzling over vegetables or fish.

Ingredients:
- 3 egg yolks
- 100 g butter
- Juice of 1 lemon (adjust to taste)
- Salt to taste
- White pepper to taste
Instructions:
1. Melt the butter over low heat and let it cool slightly.
2. In a bowl, whisk the egg yolks until they are pale and fluffy.
3. Add the lemon juice to the egg yolks and mix well.
4. Place the bowl over a double boiler and heat the mixture on low heat, stirring continuously.
5. Slowly drizzle the melted butter into the egg mixture while continuing to stir. The sauce should thicken.
6. Season with salt and white pepper to taste.
7. Serve immediately over vegetables or fish.
