A delicious and stunning celebration cake, perfect for occasions like International Women’s Day or Minna Canth Day. This traditional Swedish cake features a dome-shaped sponge filled with whipped cream and jam, covered in sugar paste.
Preparation Time: 2 hours (plus cooling time)
Serving Size: 12-14 pieces

Ingredients:

- Cake Base:
- 4 eggs
- 1 dl sugar
- 1 dl all-purpose flour
- 1 tsp baking powder
- Filling:
- 2 dl whipped cream
- 1 dl raspberry jam
- 1 dl vanilla custard
- Topping:
- 250 g green sugar paste
- Powdered sugar (for dusting)
- 100 g marzipan (for decoration)
- Decorations:
- Fresh berries (e.g., raspberries or strawberries)
- Edible flowers (optional)

Instructions:

1. Prepare the cake base. Whisk the eggs and sugar until fluffy. In a separate bowl, mix the flour and baking powder, then gently fold them into the egg-sugar mixture.
2. Pour the batter into a greased and floured cake pan. Bake at 175°C (350°F) for about 25-30 minutes. Allow to cool.
3. Once cooled, cut the cake into three layers. Optionally, lightly moisten the layers with milk.
4. Spread raspberry jam on the first layer, followed by a layer of vanilla custard and then whipped cream. Place the next cake layer on top and repeat the filling process.
5. Place the final cake layer on top and shape the surface nicely.
6. Roll out the sugar paste on a powdered sugar-dusted surface into an even sheet. Cover the cake with the sugar paste and smooth out the surface.
7. Decorate the cake with marzipan decorations and fresh berries.
8. Let the cake set in the refrigerator before serving.
