Ingredients:
- 300 g broccoli
- 1 onion
- 2 garlic cloves
- 1 tablespoon curry powder
- 400 ml coconut milk
- 2 tablespoons oil
- Salt and pepper to taste
- Fresh coriander (for garnish)
Instructions:
1. Rinse and chop the broccoli into small pieces.
2. Peel and finely chop the onion and garlic.
3. Heat the oil in a pan and add the onion. Sauté until the onion is soft.
4. Add the garlic and curry powder, mix well, and cook for another minute.
5. Add the chopped broccoli to the pan and stir.
6. Pour the coconut milk into the pan and let the mixture simmer on low heat for about 10-15 minutes, until the broccoli is tender.
7. Season with salt and pepper.
8. Serve warm and garnish with fresh coriander.
