A traditional Finnish fermented beverage with a refreshing taste.
Preparation Time: 1 day (plus fermentation time)
Serving Size: 4-6 servings
Ingredients:
- 1 liter of water
- 100 g sugar
- 50 g hops
- 1 tsp dry yeast
- 2-3 dl coarse rye bread (preferably dried)
- 1 lemon (sliced)
- 1/2 tsp salt
Instructions:
1. Boil the water in a pot and add the sugar. Stir until the sugar dissolves.
2. Add the hops and let the mixture simmer on low heat for about 30 minutes.
3. Remove the pot from the heat and allow the mixture to cool to room temperature.
4. Add the dry yeast and stir well.
5. Incorporate the rye bread, lemon slices, and salt, mixing all the ingredients together.
6. Cover the pot with a cloth and let the mixture ferment in a warm place for about 24 hours.
7. Strain the finished kalja into a clean bottle and refrigerate. Allow it to mature for a few more days before serving.
8. Serve chilled alongside church coffee or at other gatherings.
