A delicious and moist banana bread infused with tart lingonberries. Perfect for breakfast or a snack! Preparation Time: 15 minutes

Serving Size: 10 slices
Ingredients:
- 3 ripe bananas
- 2 dl lingonberries
- 1 dl sugar
- 1 dl vegetable oil
- 1 dl plant-based milk (e.g., oat or almond milk)
- 2 tsp vanilla sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 3 dl all-purpose flour
- A pinch of salt
Instructions:
1. Preheat the oven to 175°C (350°F).
2. In a bowl, mash the ripe bananas until smooth.
3. Add sugar, vegetable oil, plant-based milk, and vanilla sugar to the mashed bananas. Mix well.
4. In a separate bowl, combine the dry ingredients: baking powder, baking soda, all-purpose flour, and salt.
5. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
6. Gently fold in the lingonberries.
7. Pour the batter into a greased loaf pan.
8. Bake in the oven for about 50-60 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
9. Allow to cool before slicing. Enjoy!
